Marshmallow Window Cookies
10.5 oz colored (or white) mini marshmallows
12 oz. bag chocolate chips
1 stick butter
8 oz flaked coconut
Melt butter and chocolate over low heat. Stir gently to combine. Remove from heat and fold in marshmallows. Cover baking sheet with wax paper and spread a layer of coconut. Turn chocolate-marshmallow mixture out onto coconut in a log shape. Using wax paper, roll up coconut around chocolate-marshmallow mixture. Chill for several hours and slice into sections. These are delicious and if you use colored marshmallows, the sliced cookies resemble stained glass windows.
